Let's call it...
Pasta Alla Myra
(It serves approx. 4 if you are good at portion control -- for us it didn't stretch so far.)
2 chicken breasts
2 hot italian sausages
1/2 lb. fettuccine
1 can diced tomatoes
1 can diced green chilies
4 cloves of garlic
onion flakes
red pepper flakes
extra virgin olive oil
fresh basil
S & P
Put a pot of water on and bring to a boil. Cook the noodles until al dente, remember to throw in some salt to season the noodles while cooking. While that cooks, put a skillet on medium high with some olive oil. Chop up your chicken breasts and cut the casings off the italian sausage. You can use sweet or hot sausage, I like things spicy so I went with hot. I also chopped up fresh garlic and cooked that with the meat. Once the meat was cooked I threw in my can of diced tomatoes and green chilies and added more olive oil. At this point turn down the heat to more of a simmer. While it was simmering, I added some salt and pepper, onion flakes, and a little bit of red pepper flakes. I don't really measure I just throw spices in and hope that I don't overdo it. Once my noodles were cooked and my sauce had been simmering for about 15-20 minutes I threw the noodles in with the sauce and also tossed in a handful of fresh basil...and some more olive oil for good measure. Toss it all together and...waala, a tasty dish.
Enjoy!
